Market access: Cascais market (Wednesdays and Saturdays), Lisbon markets 25 minutes away

Sintra

Covered areas: Sintra town, Colares, Praia das Maçãs, Azenhas do Mar

Typical villa types: Mountain estates, historic quintas, modern villas with forest views

Market access: Sintra farmers' market (Sundays), Lisbon markets 35 minutes away

Algarve

Here's a typical July evening menu I'd prepare for 12 guests at a Cascais villa:

Canapés (Poolside, Pre-Dinner)

First Course

Prawn Carpaccio — Raw Portuguese prawns, mango, avocado, yuzu dressing, wasabi peas, micro herbs

Second Course

Grilled Octopus — Charcoal-grilled Algarve octopus, sweet potato purée, chorizo crumb, smoked paprika oil

Main Course

Whole Grilled Sea Bass — Line-caught bass, fennel and lemon salad, herb butter, roasted vine tomatoes, fingerling potatoes

Dessert

Mango Panna Cotta — Portuguese Algarve mango, coconut cream, lime, passionfruit gel, toasted macadamia

Pricing for this menu: €95 per person (€1,140 total chef fee) + approximately €350 ingredients (€29pp) = €1,490 for 12 guests

BBQ & Outdoor Cooking

Most villas in Portugal have outdoor BBQ areas or grills. I bring portable equipment when needed, but if your villa has a quality setup, we'll use it.
