The Arrábida coast is one of Portugal's best-kept secrets. Thirty minutes south of Lisbon, the landscape shifts completely - limestone cliffs dropping into turquoise water, vineyards rolling through hills, and a fish market in Setúbal where the morning catch is still flopping when you get there. It's one of my favourite places to cook.

Why the Arrábida Coast Is a Chef's Playground

The seafood. Setúbal's fish market is one of the best in Portugal. Atlantic sea bass pulled from the water hours ago. Red mullet with eyes still clear. Octopus that hasn't seen a freezer. Razor clams from the Sado estuary. And cuttlefish - the local choco frito is famous for a reason, but I like to take it further. Choco with squid ink risotto, or grilled and served with a yuzu butter and local samphire. When the raw ingredient is this good, the chef's job is to not get in the way.

The wine. Most people don't know the Setúbal peninsula is a wine region. They should. Moscatel de Setúbal is legendary - the sweet fortified version is world-famous, but the dry whites from the same grape are criminally underrated. Then there's Palmela, where the Castelão grape produces reds with enough body for meat courses but enough freshness for a warm evening. And Azeitão sits right in the middle of it all, with small producers making wines you'll never find in Lisbon.

The setting. Arrábida villas come with views that do half the work for you. I've cooked dinners on terraces overlooking the Serra da Arrábida, with the sun setting over the natural park while guests work through a five-course seafood menu paired with wines from producers ten minutes down the road. That's an evening no restaurant can replicate.

A Typical Arrábida Dinner

I shop the morning of your dinner. Setúbal fish market first, then a stop in Azeitão for cheese (the local sheep's milk queijo de Azeitão is one of Portugal's great artisan cheeses), and a wine producer if we're doing a pairing. Everything is sourced within 20 kilometres of your villa.

A menu might look like this:

Amuse: Setúbal oyster with yuzu mignonette

First: Crab and avocado verrine with lime and coriander oil

Second: Grilled cuttlefish, squid ink risotto, local samphire

Main: Whole roasted sea bass, clam and white wine broth, roasted Arrábida potatoes

Cheese: Queijo de Azeitão with fig jam and walnuts

Dessert: Moscatel crème brûlée with toasted almonds

Each course paired with a wine from the Setúbal peninsula

I cover the entire Setúbal peninsula: Setúbal city, Arrábida Natural Park, Palmela, Azeitão, Sesimbra, and Tróia. Travel is included in the price - no surcharges. I arrive 2-3 hours before dinner, cook in your villa kitchen, serve, and clean up everything.
