Christmas gets all the attention. But winter in Portugal is full of celebrations that deserve just as much care — and restaurants on New Year's Eve and Thanksgiving are either fully booked or charging triple.
A private chef gives you the evening you actually want. No fighting for reservations. No rushed service. No strangers at the next table. Just your people, your home (or villa, or yacht), and a menu designed around what you're celebrating.
Here's what winter holiday private chef services look like beyond Christmas — from Thanksgiving through New Year's Eve and into January gatherings.
New Year's Eve: The Biggest Night of the Year
New Year's Eve is when everyone wants to celebrate at the same time. Restaurants charge €150-250 per person for fixed menus, bars have cover charges, and you're locked into someone else's schedule.
A private chef for NYE means you control the pace. You can time dinner to finish just before midnight, serve champagne on your terrace as the fireworks start, and avoid the chaos of trying to get a taxi at 2 a.m.
What a New Year's Eve Private Chef Service Includes
Pre-midnight canapés and champagne — Most clients want the evening to feel celebratory from the start. Think oysters, smoked salmon blinis, mini beef wellingtons, or truffle arancini passed as guests arrive.
Multi-course tasting menu — 5-7 courses is standard for NYE. Pacing is critical: you want to finish the main course around 11:30 p.m. so everyone can toast at midnight without rushing or feeling too full.
Midnight toast and petit fours — Champagne service timed to the countdown, often with a small sweet bite (chocolate truffles, macarons, or a tray of Portuguese pastéis de nata with a modern twist).
Late-night bites (optional) — Some clients request a light supper station after midnight: cheese and charcuterie, sliders, or a noodle bar. This is especially popular for villa parties where guests stay until 3 or 4 a.m.
New Year's Eve Pricing and Booking Timeline
Expect to pay €100-150 per person for a full NYE service with champagne, canapés, tasting menu, and midnight toast. Pricing is higher than standard private chef bookings for three reasons:
- Ingredient sourcing — Premium suppliers charge more for New Year's Eve orders. Oysters, caviar, truffles, and high-end beef are in peak demand.
- Late-night service — Most private chef bookings wrap by 11 p.m. NYE extends well past midnight, requiring additional hours and often an assistant.
- Opportunity cost — Chefs can only take one booking per night. NYE bookings are secured months in advance and often require deposits.
Book 6-8 weeks ahead for December 31st. Some clients secure their chef immediately after Christmas. The best availability is gone by early December.
Thanksgiving: A Taste of Home for Expats and Americans Abroad
Portugal has a large expat community — American tech workers, remote professionals, retirees, and international families. Thanksgiving matters to them, even if most Portuguese people have never heard of it.
The challenge: sourcing ingredients. Whole turkeys are available in Portugal but need to be ordered in advance (most butchers don't stock them by default). Cranberries are hard to find fresh; you'll need dried or frozen. Pumpkin purée doesn't exist in supermarkets — you make it from scratch or improvise with butternut squash.
A private chef who knows how to work around these constraints makes Thanksgiving possible without spending three days hunting for ingredients yourself.
What a Thanksgiving Private Chef Menu Looks Like
Traditional Thanksgiving elements:
- Roast turkey with herb butter and pan gravy
- Sage and onion stuffing (or cornbread stuffing for Southern clients)
- Cranberry sauce (made from dried cranberries or lingonberries as substitute)
- Mashed potatoes with brown butter
- Roasted root vegetables (carrots, parsnips, sweet potato)
- Green beans with almonds
- Pumpkin pie or pecan pie (pecans are easier to source in Lisbon than pumpkin)
Portuguese twists (optional):
- Chouriço cornbread stuffing
- Roasted chestnuts (in season November-December)
- Portuguese sweet potato purée with cinnamon
- Almond tart instead of pumpkin pie
Most clients want a straight traditional Thanksgiving — no fusion, no twists, just the meal they grew up with. But for mixed-nationality gatherings (American + European guests), adding one or two Portuguese elements bridges the cultural gap.
Thanksgiving Booking Timeline and Pricing
Book 2-3 weeks ahead for Thanksgiving. Turkey orders need to go in early. Most Lisbon butchers require 1-2 weeks' notice for whole birds over 5 kg.
Pricing: €85-110 per person for a full Thanksgiving service including turkey, sides, dessert, and kitchen cleanup. Groups of 8-12 are ideal; larger groups (15+) may require an assistant.
Other Winter Holiday Occasions
Hanukkah Dinners
Portugal's Jewish community is small but growing, especially in Lisbon. Hanukkah private chef services focus on traditional Ashkenazi or Sephardic dishes: brisket, latkes, sufganiyot, roasted chicken, kugel, and challah.
Kosher certification is limited in Lisbon — most private chefs (including myself) are not certified kosher. For observant clients, this means providing a vegetarian or pescatarian menu using pre-approved ingredients, with the client supervising kashering of cookware if required.
Chinese New Year (Lunar New Year)
Lisbon has a significant Chinese community, particularly around Martim Moniz and Arroios. Lunar New Year falls in late January or early February and is a major celebration.
Symbolic dishes matter: whole fish (for abundance), dumplings (prosperity), long noodles (longevity), and sticky rice cake (progress). A private chef with Asian cooking experience can deliver these properly — crispy-skinned fish, hand-folded dumplings, and wok-fried noodles.
Burns Night (January 25th)
Scotland's national poet is celebrated by expats worldwide. Traditional Burns Night suppers include haggis, neeps and tatties, Scotch broth, and whisky.
Haggis is available in Lisbon through specialty UK import shops or can be made from scratch (lamb offal, oats, spices, encased in sheep stomach or synthetic casing). Most non-Scottish guests try it once out of curiosity.
Three Kings' Day / Epiphany (January 6th)
More important in Portugal than in most English-speaking countries. Families exchange gifts, eat Bolo Rei (King Cake), and gather for a final festive meal before the holidays officially end.
A private chef dinner on January 6th is often more relaxed than Christmas or New Year's — smaller groups (6-10 people), simpler menus, and a focus on Portuguese traditions rather than international fusion.
How to Book a Winter Holiday Private Chef
1. Start the Conversation Early
For New Year's Eve: book by mid-November. For Thanksgiving: book by early November. For other winter holidays: 2-3 weeks is usually enough, but December availability fills fast.
2. Specify Your Cultural and Dietary Requirements
If authenticity matters (traditional American Thanksgiving, kosher-style Hanukkah, proper Lunar New Year symbolism), say so upfront. Not all chefs have experience with every cuisine or cultural tradition.
Dietary restrictions (vegetarian, gluten-free, shellfish allergy) are easier to accommodate when flagged early. Last-minute changes on holiday menus are difficult — ingredient orders are placed days in advance.
3. Confirm Service Hours and Cleanup
New Year's Eve and late-night gatherings extend past typical private chef hours (most bookings wrap by 10-11 p.m.). Clarify when the chef's service ends — midnight toast? 1 a.m. cleanup? Morning-after breakfast?
Additional hours cost extra. Agree on this before booking.
4. Discuss Beverage Service
Most private chefs in Portugal do not have sommelier training or liquor licenses. You provide the alcohol, the chef provides glasses, ice, and basic cocktail mixing if requested.
For wine pairings or cocktail service, ask if the chef works with a sommelier or bartender partner. This is common for high-end New Year's Eve bookings.
5. Lock in Your Date with a Deposit
Holiday bookings require deposits (typically 30-50% of total cost). This secures your date and covers ingredient pre-orders.
Cancellations less than two weeks before the event forfeit the deposit — the chef has already turned down other bookings and ordered perishable ingredients.
